Ingredients
  

  • 8-10 medium tomatillos husked and rinsed
  • 1 jalapeƱo or serrano pepper adjust to taste
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup white onion chopped
  • 1 garlic clove
  • 1 tbsp lime juice
  • Salt to taste

Instructions
 

  • Boil tomatillos and the pepper in a medium saucepan filled with water for about 8-10 minutes or until softened.
  • Drain and allow them to cool slightly.
  • Transfer the tomatillos, pepper, cilantro, onion, garlic, lime juice, and salt to a blender or food processor.
  • Blend until smooth or desired consistency is reached.
  • Taste and adjust salt or lime juice as needed.
  • Serve immediately or refrigerate in an airtight container for up to 3 days.

Notes

  • For a smoky flavor, roast the tomatillos and pepper instead of boiling.
  • Add avocado for a creamy variation.
  • Control spice level by adjusting the quantity of pepper or removing the seeds.
